This one started out a bit on the fly (pardon the chicken pun)... Our big kid came home sick from school today, so while I wouldn't have used chicken if it were just me, this was 'by request'.
Get Better Now! Chicken Soup
Begin with a nice swirly splash of olive oil in a large soup pot
1/2 cup diced carrots
1/2 fresh (frozen're good too) peas
2 cups diced yucca (arrowroot)
5 cloves diced garlic
a thumb-sized ginger root, diced as finely as your knife skills will permit (because even when you know it's ginger, the little hairs are, hmmm...unpleasant-which is why I don't shred it)
3 chicken cubes
1 very finely sliced chicken breast
as many sprigs of dill as you like
lots of pepper
salt to taste
Ideally, you'll have some homemade chicken stock to pour over all this...but, this time, it was on demand soup, so cubes and water it is today!
And then, the hardest/easiest part of soup, ignore it as safely as you can while it simmers away and makes itself...and in case the colourful ingredients caught your eye--that was just to say, the more colourful your foods the better!
Cheers and chao.
PS-just tried it...and if you like soup-make this:) The yucca combined with the olive oil and pepper turns itself into buttery mashed potato flavour that I was not expecting, but am really enjoying-
